Can anyone tell me what the hallmark means in the sideways crest on the blade of these James Deakin & Sons sterling fruit knives? It looks like a dove maybe? I've been able to get all the rest of them. Thanks!!

It's a trademark, not a hallmark, and indicates that the blades are plated steel, not sterling.
