The spoon in the top picture below was made by Alfenide/Christofle ( 1865-1876).
It measures 8.37 inches ( 21.25 cm.) in length.
There is a hole in the bowl that opens when the top arm is depressed.

What was this spoon used for ?

Ooooh, I have a guess for this one - separating oil (fat) from water (broth)?

Well done Salmoned.

That's close enough for me.
My reference calls it a sauce spoon.
The hole in the bowl allows the sauce to pour out, leaving the fat in the spoon.
