How old is this knife "from 1727"

I found some "scrap" knives and spoon and now I try to identify them.
Here a knife with an engraved handle, indicating the year 1727. There are no marks, neither on the blade nor on the handle.
The blade looks early 20st century, but the handle could be older. I wonder how old. What is your opinion? Could the handle be from 1727? I have very little experience with knives, blade and handle style. So all suggestions and advice is welcome. And last, if the handle is from 1727 and the blade much newer, what should I do? Restore, what?, how much?

Hi,
Engraving looks genuine early 18th century.
I have changed blades fixing them with rosin (colophony). Probably this blade was also fixed with rosin.
You can try with placing the knife on moderately heated oven, if rosin, the blade will come out. Silver cannot be soldered to steel.
Never use plaster or anything you cannot remove.
It`s worth repairing but a professional repair is needed, and done from inside after the handle is removed and cleaned. Again, it depends how it`s fixed to the blade.

It is definitely rosin and easy to disassemble. I am sure if I put the knife in boiling water, after some time blade and handle are seperated and clean. But then the problem starts, what to do next? Put this newer handle back on? Or have the handle restored and keep it as collectors item? Or?

Cannot see well but it seems the tip of the handle is badly smashed (at least what can be seen).If so, repair would not be easy at all.
Can you take an image with the tip of the handle clearly seen from above ?
If repaired you can reinsert the blade and wait for better blade.
