Who is this Religious figure on Norwegian napkin ring?

A very nice Norwegian napkin ring in original case,

Inscription reads Motiv TrondHjem Domkirk E1930, which appears to be the Nidaros Cathedral in Trondheim,

My question is, who is the figure depicted on the napkin ring, some one famous in Norway or just a random figure who may or may not have been at the Cathedral at the time?

My guess would be Eysteinn Erlendsson who was the archbishop of Nidaros when they started to build the cathedral: https://en.wikipedia.org/wiki/Eysteinn_Erlendsson
There are no attributes in the picture so basically it could be any other (catholic) bishop though.
