Neues und Bewährtes.
Sauce-Entfettungslöffel. (Mit Abbildung, Fig. 105.)
Auf der vorjährigen Pariser Weltausstellung, die in ihrem Rahmen so- viel des Neuen und, wenn auch nicht immer praktisch Verwerthbaren, so doch Interessanten vereinigte, waren u. a. auch Haushaltungsgegenstände, namentlich Küchengeräthe, in grosser Mannigfaltigkeit vertreten. Als be- sonders zweckmässig darf ein Sauce-Entfettungslöffel bezeichnet werden, welcher von der Firma N. Cailar, Bayard & Co. Paris ausgestellt worden war. Wie sein Name andeutet, soll der Löffel dazu dienen, auf möglichst rasche und mühelose Weise das überschüssige Fett aus der Sauce auszuscheiden. Es ist ein den Hausfrauen nur zu wohl bekannter Uebel- stand, dass das leichte Fett stets oben auf der Brühe schwimmt, während der eigentliche Bratensaft zu Boden sinkt. Auf dieser Erscheinung beruht die Construction des neuen Löffels, der seinen Zweck weit vollkommener erfüllt als die auch bereits im Haushalt verwendeten Sauciéren mit doppel- tem Ausguss.
Aus der Abbildung Fig. 105 lässt sich ersehen, dass der Boden des Löf- fels zu einer Rinne vertieft ist, welche in einen separaten schnabelförmigen Ausguss übergeht. Neigt man den gefüllten Löffel mit dem schnabelförmi- gen Ausguss abwärts, so kann, da das obenauf schwimmende Fett von der durch den Löffelrand selbst gebildeten Scheidewand zurückgehalten wird, nur der fettfreie, die Kraftstoffe enthaltende Theil der Sauce ausfliessen ; das Fett wird alsdann über die andere Seite des Löffels ausgegossen. Dass der Löffel, dem es auch an gefälliger, handlicher Form nicht fehlt, sich ebenso gut noch für manchen anderen Zweck benutzen lässt, ist selbstverständlich.

Sauce Degreasing Spoon. (With illustration, Fig. 105.)
At last year's Paris world exhibition, which combined within its framework so much that was new and interesting, if not always practical, there were, among other things, also household items, especially kitchen utensils, represented in great variety. A sauce degreasing spoon exhibited by the company N. Cailar, Bayard & Co. Paris may be described as particularly useful. As its name suggests, the purpose of the spoon is to remove excess fat from the sauce as quickly and effortlessly as possible. It is a nuisance well known to housewives that the light fat always floats on top of the broth while the actual gravy sinks to the bottom. The construction of the new spoon is based on this phenomenon and fulfills its purpose far more perfectly than the saucepans with double spouts already used in the household.

From Fig. 105 it can be seen that the bottom of the spoon is deepened into a channel, which merges into a separate beak-shaped spout. If the filled spoon with the beak-shaped spout is tilted downwards, since the fat floating on top is held back by the partition formed by the edge of the spoon itself, only the fat-free part of the sauce containing the fuel can flow out; the fat is then poured out over the other side of the spoon. It goes without saying that the spoon, which is not lacking in a pleasing, handy shape, can also be used for many other purposes.

Here is an image of a piece of Cailer Bayard made kitchenalia. I imagine it was advertised as a "Manche a Gigot", though a "ham bone" or "lamb bone" clamp or holder is a name that might do. 99% of the letter "C" is missing and no "Cie". Its date is unknown to me.
